Healthy Chocolate Black Bean Brownies

1 (15 oz) can of black beans, drained and rinsed

1 Large egg

2 Large egg whites

2 extra ripe avocado

1 tsp olive oil or canola oil

2/3 c. unsweetened cocoa powder (Use high quality cocoa powder!)

1/4 tsp baking powder

1/4 tsp baking soda

1/4 tsp sea salt

2 tsp vanilla extract

1/2 c. brown sugar (I didn’t use )

1/3 c. chocolate chips of choice, plus 2 tbsp for topping (I didn’t use)

Directions:

Preheat oven to 350 degrees F. Grease an 8×8 inch baking pan.

Place all of the ingredients except for the chocolate chips in a high powered blender or food processor. Process until a smooth batter is formed. If the mixture is too thick, add in a teaspoon or two of water.

Add in the 1/3 cup of chocolate chips and fold into the batter. Pour the batter into the prepared baking pan and sprinkle the remaining 2 tbsp of chocolate chips on top (or other topping of choice!).

Bake for 25-35 minutes or until a knife inserted in the center comes out mostly clean and the top of the brownies begin to crack.

Let the brownies cool completely and cut into 12 bars.
